Sugarmama’s Baking has introduced the Kolache, an Eastern European pastry popular in the Midwest but little-known elsewhere, to Springfield, Oregon, and is receiving rave reviews for its exclusive, yet authentic recipes. This tasty treat consists of light pastry dough infused with lemon zest, then topped with a sweet cream-cheese blend and a fruit compote. Sugarmama’s recipes are the result of both a multigenerational Czechoslovakian recipe and extensive experimentation with different fruit and savory combinations. This means they remain true to the roots of this delicious pastry whilst also involving flavor combinations that have never been used before in Kolaches. All of their ingredients are locally sourced, and attention is paid to making sure they are of the highest possible quality.
Sugarmama’s Kolaches have proven to be so popular that the company is now seeking to expand into a storefront. The owners are attempting to finance this via the crowdfunding platforms Kickstarter, Indiegogo and GoFundMe, and also wish to use their storefront space to establish a commercial kitchen that can be used by other small food-service businesses. They are seeking donations in order to bring a unique Czechoslovakian treat to Springfield, and help to resolve the lack of commercial-kitchen space for other small businesses.
The plan for Sugarmama’s expansion is based on the company’s belief in seeking create a strong, resilient community-oriented business that provides living-wage jobs, working with other companies as opposed to in competition with them, and putting money into the local economy. Volunteerism is also at the heart of what Sugarmama’s does, and the company has participated in fundraisers for the YMCA, given meals to the homeless during the COVID-19 pandemic and provided catering services to families and animal-rescue teams during the 2020 wildfire season. It is an enterprise that is focused on helping others and not just on creating a profit.
The plan for Sugarmama’s expansion represents a great opportunity to help the spread of a new culinary sensation whilst supporting a grassroots company with major aspirations and a first-class product to sell. This is a company with a conscience that plays an active role in the community as well as one that delivers high-quality food, and as such should be backed as much as possible.
